Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 4
2 cups of rice (I typically use white, but brown works as well)
1 lb sausage (Turkey, Pork etc.. whatever your family's needs are)
1 can of Pineapple Chunks
1/2 Bell Pepper Coarsely Chopped
1/2 Onion Chopped Fine (optional)
In Medium Pot cook Rice fully
Lightly oil/spray one Large Skillet
Place chopped pepper and onion in skillet
Open Casings from sausage, place loose sausage in pan cook thoroughly
Add pineapple to sausage and vegetables, cook until pineapple is warm
Serve Sausage over rice, OR place rice in pan with sausage mixture, and continue cooking for five minutes so the flavors have time to marry.
***This recipe is incredibly versatile:
You can substitute any meat for the sausage or use no meat.
Frozen/Canned Corn can be added instead of pineapple
Frozen Carrots can be added to the corn version
My kids love Ketchup added to the original version, and my husband likes cheese on top
